Chocolate Holiday Canadian Candy Bark

Toronto’s food scene pulses with the energy of over 250 different ethnicities.  My mouth is watering at the memory of all the treats we sampled in this awesome city:  poutine, ice wine, Nanaimo bars and an addictive nutty candy bark made with white chocolate, raspberry jam and red candy coated peanuts.

That is the inspiration for this year’s Christmas candy bark.  The original is delicious, but a bit too sweet-on-sweet for my taste.  I use mixed nuts, yielding a more balanced salty, crunchy, tangy and creamy bite. 

I really love how these turned out!

Canadian Christmas Nutty Candy Bark

Canadian Christmas Candy Bark

An addictive nutty candy bark made with white chocolate, raspberry jam and mixed nuts
Course Dessert
Servings 6 people

Ingredients
  

  • 2 11oz packages white chocolate chips
  • 1/2 cup mixed nuts
  • 1/8 cup raspberry preserves
  • Green decorating sugar & sea salt for garnish

Instructions
 

  • Line a sheet pan with parchment paper or wax paper
  • Place the white chocolate chips in a large bowl and microwave for 30 seconds.
  • Stir the chips.  They won’t be melted.
  • Microwave another 30 seconds.
  • Stir the chips.  They still won’t be melted.
  • Repeat with 30 second intervals in the microwave until the chocolate is melted. 
  • Do NOT be tempted to rush this process.  You are tempering your chocolate and it will hold up better once it has set up.
  • Once the chocolate is melted, add the nuts and stir to combine.
  • Pour onto the prepared sheet pan and spread it out.  It does not have to be perfect.
  • Drop small spoonfuls of the raspberry jam and swirl it into the chocolate with a fork or a butter knife.
  • Finish with a sprinkle of sea salt and green decorating sugar for garnish.
  • Refrigerate until firm.
  • Break apart and enjoy!

I also have used chopped pretzels and creamy peanut butter instead of the nuts and raspberry jam.  Use your favorite salty and sweet combination.

    The bark is fabulous! This combo works really well, and I’m already especially partial to raspberry . . .
    I like my bark pieces thin, so I simply spread mine thinner in the pan. Delicious!
